Perfect summer meal

Drew’s home from Munich and I made us the perfect late lunch! This meal was so light & refreshing and I suggest everyone make it! 🙂

I got the Quinoa cup recipe off Pinterest and we LOVED it! Quinoa is extremely healthy and has a lot of protein.  You could really change up the recipe to make it whatever you want.  Broc & cheese would be good!

I served it with my FAVORITE summer salad.  Apple & strawberries w/ feta.  I prefer the “fresh” feta that’s in water as opposed to the dry feta but that’s just me.  I dressed it w/ balsamic.  This salad is amazing with poppy seed dressing but balsamic is the healthier dressing
