Southwestern Rice (Gluten Free)

This is yet another recipe idea I stole from my mother in law Jana.  She made this fabulous rice while we were in California.  I love, love, love rice!  For this recipe I used about 2 cups of cooked rice, shaved kernels of 1 ear of corn, a can of black beans, some chopped cilantro & about a tablespoon of cumin. I sauteed on high heat so the corn could get nice and toasted.  This was delicious and is so versatile!  It would be great on a salad, in tacos, or with grilled beef, chicken or fish.

We made some taco meat and put the rice in our tacos.  Great summer dish!
