Today was SUPER busy at work since I've been out for a bit. I didn't have 1 minute of down time today and that never happens. The good thing was I had a ton of energy & started getting organized for all my summer programs. I emptied 3 cabinets & labeled them June, July & August. Each event I have is color coded by month & labeled in chronological order within each cabinet. Some are empty spots right now, but they will soon be filled with supplies. YAAAAY to being organized!! Today was also filled with new recipes. When low carbing I feel the need to become a gourmet chef 🙂
Breakfast: chorizo, eggs & cheese
Lunch: “pulled” pork tenderloin AMAZING recipe I will use OFTEN! This is the official recipe
But I'll explain what I did cause it's super easy & I messed up measurements & it still came out great! I put a pork tenderloin in a crock pot & covered it in a sauce I whipped up that had
- 1 cup chicken stock
- 1/2 cup soy sauce
- 2 TB balsamic vinegar
- 1 TB Worcestershire sauce
- 1 TB chili flakes
- 1 TB crushed garlic
- Good amount of honey. Maybe 1/3 cup
I poured that over the pork & cooked on low for 6 hours. Shredded the meat & let it cook in the juices for another hour. GREAT meal!!!
Dinner: coconut crusted chicken nuggets w/ spicy mango sauce
I would properly recognize the site I got the recipe from but now I can't find it!! Basically you cut up chicken into chunks, dip in a mix of egg white & lime juice then into unsweetened fine shredded coconut. Bake at 375 for 10-12 minutes a side. The sauce has me bummed!! This recipe needs a GOOD dipping sauce but mine just didn't work 😦 it's a good recipe & would make perfect coconut shrimp but now I need to find a great dipping sauce. Back to the drawing board.
Drew is gone yet again!! He is usually home 3-4 days a week and lately he's home maybe 2 nights. I'm starting to think I'm a single old maid. Oh well!! Hope tomorrow is a WONDERFUL Wednesday!!
Today was a boring day. It rained all day so aside from a few errands I stayed in. Drew finally got home!! He unexpectedly worked every day since Tuesday. Boo to that. The exciting part of today was I got tickets for a show in the city on Friday. YAY. really excited about that! On to my eats…

Lunch: chicken wings. This time I cut them down before cooking. I loooooove chicken wings!
Dinner: Garden salad with grilled chicken. Drew wanted take out so this was the best option & delicious
I've already made a pork tenderloin for tomorrow. I'm trying lots of new recipes soon and I'm SO excited!! Tomorrow I have to go back to work. Boo! Hopefully it will be a great day though 🙂
I wanted to get a lot done today: groceries, walking, church but I woke up tired. That's the worst feeling ever but thankfully I got groceries last night so that was off my list. I decided to watch church online and instead of walking I went back to the zoo. What a GREAT zoo & I got my steps in 🙂 I read online it's rated the best zoo in NJ. I just assumed it was a small no big deal zoo since we live in such a small area. It's huge, nestled in between mountains & even has a ropes course & zip lining. Super cool
It was a great day exploring. I knew drew wouldn't want to go & he's out of town so I'm glad I made myself get out of the house & go. On to my eats:
Breakfast: chorizo egg & cheese ( so glad I still have some chorizo in my freezer. Yum!!)
Lunch: cheese & meat plate The raschela cheese was new to me but I liked it! The description of it said “strong hay flavor” which sounded appealing 🙂 it wasn't hay at all. More like Muenster. I did NOT like the farmers cheese. Mack enjoyed it though. He helped me eat this
Dinner: chicken wings (Spiced with the rub I make) I love chicken wings!!!
Need to actually eat veggies tomorrow. Oops!!! So in the sermon today the pastor said something that I SO needed to hear. “We experience optimum growth & change when we fuel the good things that are already present & happening in our lives” he went on to talk about how we focus on the negative. We could have done 100 good things that day but go to bed worrying about 1 mistake. I've been sooooo consumed with my hate of New Jersey & desperation to get back to Texas so that reminder about positivity was just what I needed.
Tomorrow will be filled with cleaning & drew gets home YAY!! Happy Monday to all!
What an AMAZING trip to Texas we had. The week felt like a day. We had some great storms and flooding during the week. Oh how I miss Texas storms. We did nothing but eat,watch plays, eat, shop, eat some more. So fun & great family time. Today I had to work at a booth that was set up for the public libraries at our local zoo. It was Essex county “open house” at the zoo. That big time politician I knew from our library set up the day so the public could see all the government offers the community. It was PACKED and so hot but a fun morning. Can't wait to go back & actually explore the zoo. It's SUPER nice who knew! Here are a couple of picture I took

Breakfast: Eggs with bacon, jalapeño & cheese
Lunch: after the zoo I stopped at a diner & picked up an omelette that had grilled chicken, broccoli, onion, tomato & cheddar. SOOOOO good
Dinner: a hamburger patty (sounds boring but meat was from Snake River Farms. AMAZING)
Stuffed with amazing food and it was all low carb. Hooray!! Tomorrow will be a busy day so hopefully going to bed early like the old lady I am. Already miss Texas soooooo much & hope more than anything we get back soon!!
I’ve come up with a spice rub I use on everything these days. I’ve put it on chicken. Chicken wings & pork tenderloin. All amazing. It is:
- Smoked paprika
- Chili powder
- Onion powder
- Sometimes a bit of brown sugar
Marinate the meat in that mix with a bit of oil to stick over night & you are good to go. The bit of brown sugar is great on the pork. Really gives it that tiny sweet but smokey taste. Yum
Tonight I have a STEM class to teach at the library. We are making hover crafts using a CD, a pull top & a balloon.
The problem about this very easy project is that when I went to buy the sports bottles for the pull tops I found that NOTHING comes with a pull top anymore they are all flip caps. The pull top is key to making the project work. So onto plan B, dish soap bottles. Those def have pull tops. The ONLY dish soap bottles with pull tops are the LARGEST size bottle of palm olive…the value size at $4 a pop. So now I have my pull tops & 25 gallons of dish soap. Thank goodness we capped the class size to 25. What does one do with so much dish soap?

It's been a tough week. We lost my papaw on Tuesday. I knew this day was coming. Prepared for it. Even talked to drew about “how will I respond when I get the news papaw is gone?”. He said, “you will cry but it will be ok”. I thought I had mourned him…I knew this was coming but it was all much harder than I thought. He was such an important figure in my life. But he was also a reader of this little blog & the last time I saw him he even said “hey I love that thing you write” so I will keep on for him 🙂 today was the funeral in Texas and I chose not to go. I missed being with family but I just associate going to tx lately with going to see him. I wanted my last memories to be of our time together not seeing him laid to rest.
on to my day… I wanted to do something fun since I missed out on family time & decided to go see a musical in the city. I stopped off for brunch before my 2:00 show and had an amazing Bloody Mary & omelette
I then made it over to my show Fun Home. This was in a TINY theatre that is under the HUGE theatre Wicked is in. Loved the set up. Fun home got 12 tony nominations & a lot of buzz so I was really excited about it
Before the show started I was looking around and here is what I'm thinking in the following pictures: 1. OMG is that Sherley MacLaine? 2. Guy freaking out & introducing himself it's totally her 3. YES! I got a decent pic
The play was good. Different. But really good. My big problem came afterwards. The show ended at 3:50 & my train at Penn left at 4:11. I was a full mile away & timed the walk on the way there and it was about 22 minutes because of the crowds (you have to go THROUGH Times Square). I POWER walked and jogged my way to Penn telling myself if I don't keep up this pace I'm going to miss the train. I RAN as soon as I made it into Penn & boarded the train at 4:10!!! Is that not perfect timing? Maybe my papaw was looking out for me :). 9 days till I go to Texas with mom & brother. THAT will be a great time 🙂
My pretty white blooms left after a week 😦 other things are blooming now though. More pinks & purples. It went from spring back to winter for a full week now summer is here. 88 on Sunday WHAT?!?! I don't like it. This is from my park I walk in
I checked out this book at the library this week & everything he describes is so me. I've know for years I shouldn't eat wheat/carbs but I'm stubborn. My skin rashes (which he describes in the book) have gotten out of control. They used to be on just my upper arms but now have spread to my face and forearms. Sign,much?
So it's time to really change. Not for now or most of the time but for good. (Insert cryin emoji) but it will be good & I need it. Tonight I made sautéed spinach with grilled chicken thighs that I seasoned with smoked paprika,salt & pepper. So filling & delicious.
19 days before we go to Austin!! Can't wait to see my momma & maybe see my brother :). Need to review all restaurants & pick out amazing WHEAT FREE items. I'm sure that's not hard to do in Austin 🙂
