what I ate Wednesday

This has become more like a private journal that only close family read so I apologize for being boring. I’m just trying to stick with this finally and need to post what I’m eating for accountability.  I’ve also been having lots of fun cooking new things so why not document ?!

Breakfast: eggs on Ezekiel bread (it’s the healthiest bread don’t kill me! Ha)

Lunch: chicken salad, same as yesterday

Dinner: zucchini spaghetti

I was SO excited & scared about dinner. I bought my spiralizer at least 6 months ago but I’m not a huge fan of spaghetti squash so I was too scared to even try it really. 

It was super easy to use. I sautéed the zuc in olive oil for about 30 seconds & just like that… Perfectly aldente “pasta” it was SO good. Soooo much better than I had hoped for!! YAY

 

Another day not at the gym but it was SUPER busy at work..the kind of busy you can hardly stand afterwards. Super fun day at the library though! I’ll be back in the gym in the morning 🙂
