Fish Thursday

We try to  not eat red meat/chicken every day so we have a day for fish and a day for just veggies.  Today was our fish day and we use our favorite tilapia recipe from my mother in law Jana.  I was not always a fish person…it wasn’t until I was in college that I would eat any seafood but this recipe is fantastic even for those hesitant about fish

I put the tilapia on a bed of lemon slices and top it with a mixture of mayo, lemon juice, grated parm, a hunk of butter & lots of fresh cracked pepper.  Bake at 400 for about 15-20 min.  We like to have it with brown rice & roasted asparagus



So truth? The pan fell as I was taking it out of the oven & 1 filet fell out.  We had 1 filet as lunch and ordered a gluten free pizza.  All was delish!

2 years ago we bought Mack a reindeer toy from Petco that he was obsessed with.  So  much so that we bought him 15 of them after they went on sell after Christmas.  Drew found them at Petco this year.  It was like Mack was reunited with a long lost friend
