That time of year

I’ve been so healthy since I quit teaching but it’s that time..flu season.  Drew’s lower back was bothering him all day yesterday. He was using my heat wraps then around 5pm the congestion/cough/wheezing hit him like a ton of bricks.  I knew he had flu cause nothing else hits that hard, that fast.  Took him into my Dr. this morning & he has the flu, bronchitis & a throat infection.  No India for him tomorrow! Bad thing is i’m achey and have a fever now.  Only a matter of time before it all hits me. The perfect antidote for the flu? Grandad’s chicken ‘n dumplings.

Simmer a whole, cut up chicken with 8 cups of water, chopped onion, salt, peppper, garlic powder & chicken base for about an hr

Pull out the chicken, let it completely cool and shred it.  Put the chicken back in the stock. Make the Bisquick dumpling recipe, roll out the dough and cut in squares

Bring the stock w/ shredded chicken to a boil & add the dumplings.  Boil for 20-30 min.

It’s SOOOO easy and perfect for cold nights or sick loved ones 🙂
