1st Day of School

I’ve been so down today.  It could be the fact that I got maybe an hour of sleep last night or it could be I just miss working.  I miss having a daily purpose and interacting with adults.  hmmm

Since I blogged, I fasted 1 day, and then have been very good about juicing, having a protein shake and 1 meal a day.

Last night I made us steak with spinach & mashed red taters.  Drew was in heaven.  This pic makes it look like a ton of food but the plate is about the size of my hand 🙂

Today in honor of Natalie the teacher I made quiche.  When I lived w/ Natalie I begged her to make us quiche once a week.  I dug out the recipe card she gave to me at a bridal shower.  For mine I:

  • sauteed onion & turkey bacon in olive oil with steamed broc. and put it in a pre baked crust
  • topped w/ 2 cups of 2% moterray jack cheese
  • poured a mixture of 3 eggs, 1 cup of milk, salt, pepper & papprika

Bake at 375 for about 35 min then let it set for 20.  Was SO good.  You can actually make quiche fairly healthy by using egg whites and reduced fat cheese.  I think I’m going to make us a chicken & spinach quiche next week. 🙂

    Yeah, quiche! That sounds quite lovely, I wish we were enjoying a slice together.

    I’m sad you miss school. Today was the normal hustle and bustle. Maybe there is a school near you where you can volunteer in the library or to be a mentor. That way you can maintain that connection with the kiddos but not have all the stress of the job.
