I have a little too much energy today but I got a lot done! Started my morning with the Day 2 Insanity work out followed up with whole grain toast & egg whites (actually I use 1 egg and about 1/2 cup of egg whites)!
The work out was REALLY hard but it felt really good and I DID it!!!! After I cleaned up I went to the grocery store and stocked up on more healthy Pinterest recipes I’m about to make. Hopefully I’ve chosen some winners this time! My afternoon lunch was a delicious juice
For dinner I heated up sauteed spinach and a lean burger patty, but I just wasn’t feeling it..not hungry at all so I boxed it up and saved it for tomorrow. Proud that I didn’t eat just because it’s dinner time..that’s 80% of the battle, eating when you’re actually hungry.
I spent the rest of the day looking into Lisbon where we will be traveling at the end of April. VERY exciting! and since I had so much energy I decided to prep some stuff I will need for tomorrow’s dinner (Drew will be home by dinner time YAY!!) I’m going to make blackened chicken over quinoa. The quinoa is mixed with corn, black beans and I’m going to add some of my tomatillo salsa to it to spice it up a little more. I made the salsa tonight to get that out of the way. This stuff is the best!!! Roast: 1 onion, 5 tomatillos, 3 garlic gloves & a jalapeno. Then blend with a bunch of cilantro, juice of a lime and some salt. THE best salsa ever
