Healthy Quesadillas

Tonight I made us healthy quesadillas.  they were SO good and really easy to make!

First: sautee mushrooms w/ a can of Rotel (drained)

Then COVER w/ fresh spinach:  

When that wilts, add diced chicken: \

Then fill it in a wheat tortilla with a little red. fat cheese:

I ate mine with Mexican catalina salad.  mmmmm DELISH!
